Vegan Grilled Street Corn Salad

We use all vegan ingredients to make this delicious vegan recipe.
INGREDIENTS
- 4 ears corn-on-the-cob, husks and silks removed
- 1/2 cup (125 mL) Hellmann's® Vegan Ranch Salad Dressing, divided
- 1 large red bell pepper, diced (about 1 1/4 cups/300 mL)
- 2 green onions, thinly sliced (about 1/3 cup/75 mL)
- 2 Tbsp. (30 mL) finely chopped fresh cilantro
- 1 lime, cut into wedges
METHOD

Preheat grill to medium-high heat.

Brush corn with ¼ cup (60 mL) Hellmann's® Vegan Ranch Salad Dressing until evenly coated. Grill, turning as needed, about 10 minutes or until corn is charred and cooked through. Remove to cutting board and cut corn off cobs.

Combine corn, red bell pepper, green onions, cilantro, and remaining ¼ cup (60 mL) Dressing until well blended. Season with salt and finely ground black pepper, if desired and serve with lime wedges.
