Beet Salad

Combined with feta cheese, hints of lemon and the creamy texture of Hellmann's® Real Mayonnaise, this beet salad is the perfect light lunch.
INGREDIENTS
- 1 medium lemon
- 3 medium beets *, scrubbed, peeled and julienned
- 1 Tbsp. (15 mL) Hellmann's® Real Mayonnaise
- 1 Tbsp. (15 mL) feta cheese, cubed
- 1 Tbsp. (15 mL) fresh mint leaves, finely chopped, (optional)
- Dash ground black pepper
METHOD

From the lemon, grate enough peel to measure 1/2 teaspoon (2mL) and squeeze juice; set aside.

Combine all ingredients, including lemon juice and peel, in medium bowl.
Tip:
NOTE: Try using assorted coloured beets for a fun look!\n*Substitution: Use 1 jar or can (15 oz. ) beets, drained and julienned.
