Combined with feta cheese, hints of lemon and the creamy texture of Hellmann's® Real Mayonnaise, this beet salad is the perfect light lunch.

  • 1 medium lemon
  • 3 medium beets *, scrubbed, peeled and julienned
  • 1 Tbsp. (15 mL) Hellmann's® Real Mayonnaise
  • 1 Tbsp. (15 mL) feta cheese, cubed
  • 1 Tbsp. (15 mL) fresh mint leaves, finely chopped, (optional)
  • Dash ground black pepper

  1. From the lemon, grate enough peel to measure 1/2 teaspoon (2mL) and squeeze juice; set aside.

  2. Combine all ingredients, including lemon juice and peel, in medium bowl.
