Mediterranean Chopped Salad with Chickpeas

Fresh vegetables are tossed with chickpeas and chopped herbs for a bright, refreshing salad refined with Hellmann's® Lemon Za'atar Vinaigrette Dressing.


  • 1 can (470 g.) chickpeas, rinsed and drained
  • 1 small red bell pepper, sliced
  • 2 plum tomatoes, diced
  • 1 small cucumber, diced
  • 1/2 small red onion, sliced
  • 1/2 cup (125 mL) sliced black olives
  • 1/3 cup (75 mL) Hellmann's® Lemon Za'atar Vinaigrette Dressing
  • 1/3 cup (75 mL) chopped parsley

  1. Toss all ingredients in medium bowl. Cover and chill 30 minutes or up to 3 days.


TIP: This recipe is great as is for a side salad, but pop it into a pita pocket and it becomes a great lunch or snack. Also delicious when stuffed into peppers and baked! Check it out.
If you have a little left over, whirl it in the food processor, serve with pita chips and it will fast become your own signature “ hummus” dip.
