INGREDIENTS

  • 1/2 cup (125 mL) Hellmann’s® Honey Dijon Salad Dressing, divided
  • 1 lb. (450 g) boneless, skinless chicken breasts, cut into 24 pieces
  • 12 mini sweet peppers, halved and seeded
  • 8 green onions, white and light green parts cut into 2-in. lengths, tops sliced and set aside for garnish
  • 8 wooden skewers, soaked in water 30 minutes

METHOD

  1. PUT 1/4 cup (60 mL) Hellmann’s® Honey Dijon Salad Dressing in large bowl. Add chicken, peppers and white and light green parts of green onions and toss to mix and coat. Let marinate 15 minutes. Reserve 1/4 cup (60 mL) Dressing.

  2. HEAT broiler. Alternately skewer chicken, peppers and green onions on skewers and arrange on rimmed baking sheet. Brush with any remaining Dressing left in bowl.

  3. BROIL 5 minutes. Remove from oven and brush with some of the reserved Dressing. Broil 2 minutes longer until chicken is thoroughly cooked. Drizzle or brush with any remaining Dressing and sprinkle with sliced green onions.
