  • 1 tsp. (5 mL) canola oil
  • 8 ounces (225 g) extra firm tofu, blotted dry and cut into cubes
  • 1/2 cup (125 mL) Hellmann's® Grapefruit Ginger Salad Dressing, divided
  • 8 cups (2 L) mixed salad greens, (assorted baby greens and watercress)
  • 1 can (540 mL) chickpeas, rinsed and drained
  • 125 mL English cucumber, halved and sliced
  • 1/2 cup (125 mL) thinly sliced sweet onion
  • 6 small cooked beets, quartered
  • 1/2 cup (125 mL) chopped toasted walnuts, optional

MADE WITH


  1. For tofu croutons, heat oil in large nonstick skillet over medium-high heat and cook tofu, stirring occasionally, until golden and crisp, about 5 minutes. Remove and set aside.

  2. Combine 1/4 cup (60 mL) Hellmann's® Grapefruit Ginger Salad Dressing, salad greens, chickpeas, cucumber and onion in large salad bowl; toss.

  3. Top with beets. Sprinkle with tofu croutons and walnuts if desired.
