- 2 brioche rolls, split and toasted
- 1 cup (250 mL) arugula
- 4 thin slices prosciutto, 1 ounce (30 g)
- 4 large eggs, poached or fried
- 1/4 cup (60 mL) shredded Monterey Jack cheese
