- 3 navel oranges, peeled and sectioned (reserve 1/4 cup juice)*
- 1 lb. (500 g) jicama, peeled and julienned match sticks
- 1/2 cup (125 mL) sliced strawberries
- 1/2 cup (125 mL) fresh blueberries
- 1/2 cup (125 mL) thinly sliced red onion
- 1/2 cup (125 mL) Hellmann’s® 1/2 The Fat Mayonnaise
- 2 Tbsp. (30 mL) chopped fresh cilantro
- 6 cups (1.5 L) baby spinach leaves
- 1/4 cup (50 mL) sliced almonds, toasted

Directions

Combine oranges, jicama, strawberries, blueberries and onion in large bowl.

Stir in small bowl with wire whisk, Hellmann's® 1/2 The Fat mayonnaise-type dressing, cilantro and reserved orange juice. Toss with fruit mixture, set aside.

Arrange on serving platter, spinach and top with fruit mixture. Sprinkle with almonds.
Chef's Tip
SUBSTITUTION: Use 1 can (11 oz./300g) mandarin oranges, drained (reserved 50 mL juice).
