Tossed in a smooth balsamic dressing with creamy Hellmann's® Real Mayonnaise, this avocado salad makes for a deliciously light lunch.

INGREDIENTS

  • 2 Tbsp. (30 mL) Hellmann's® Real Mayonnaise
  • 1 Tbsp. (15 mL) balsamic vinegar
  • 2 cups (500 mL) watercress
  • 1/2 cup (125 mL) cherry tomatoes, halved
  • 2 green onions, sliced
  • 1 small red chile pepper, thinly sliced (optional)
  • 1 Tbsp. (15 mL) chopped fresh cilantro leaves
  • 2 avocados, peeled and sliced
  • 1/2 cup (125 mL) crumbled feta cheese
  • 2 Tbsp. (30 mL) toasted pumpkin seeds
  • 5 fresh basil leaves (optional)

METHOD

  1. Combine Hellmann's® Real Mayonnaise with vinegar; set aside.

  2. Combine watercress, tomatoes, green onions, chile pepper and cilantro in medium bowl. Add dressing and toss well. Arrange salad mixture on serving plates, then top with avocados, cheese, pumpkin seeds and basil.

Tip: Also delicious with arugula instead of watercress.
