  • 2 limes
  • 2 Tbsp. (30 mL) Hellmann's® Real Mayonnaise
  • 1 Tbsp. (15 mL) olive oil
  • 1 Tbsp. (15 mL) water
  • 1 tsp. (5 mL) firmly packed light brown sugar
  • 4 cups (1 L) arugula or young leaves of spinach
  • 1 Granny Smith apple, cored and thinly sliced
  • 1/3 cup (75 mL) pine nuts, toasted
  • 2 Tbsp. (30 mL) Parmesan cheese shavings

  1. From 1 lime grate enough peel to measure 1 tsp. (5 mL), then squeeze juice from limes; set aside.

  2. Combine Hellmann's® Real Mayonnaise, olive oil, water, lime juice, lime peel and brown sugar; set aside.

  3. Arrange arugula on serving platter, then top with apple and pine nuts. Drizzle with Mayonnaise dressing and garnish with cheese.
