  • 8oz patty - AAA ground ribeye Alberta beef
  • 2 slices - Thick cut crispy Hogtown (Toronto) side bacon
  • 2 slices - Melted but sharp Quebec cheddar cheese
  • 2-3 slices B.C thick cut juicy tomatoes
  • 2-3 leafs of lettuce
  • 5 pickle slices - Famous sliced and coined mustard pickles from Halifax
  • 1 PEI potato bun

Hellmann’s caramelized onion + maple burger sauce (makes about 10-15 burgers worth of sauce ):

  • 3-4 tbsp Manitoba canola oil, divided
  • 3 small onions, finely sliced
  • 2 tbsp butter
  • 1-2 tbsp maple syrup
  • 1/3 cup water
  • 750ml Hellmann’s mayonnaise

MADE WITH

  1. Start by placing a cast iron pan on the grill, add 2 tbsp canola oil to the pan to heat up, once hot add the onions and mix around, spread them into one layer over the pan. Once softened, add 2 tablespoons of butter to the centre of the pan and let it melt. Once the butter has melted, mix and then flatten around the pan again, allow the onions to cook and brown.

  2. Slowly pour in half the water and mix. Slowly pour in the rest of the water and mix, then drizzle in the maple syrup and mix, move to indirect heat and allow the onions to soften and caramelize, about 20 minutes total. Remove from the heat and set aside to cool to room temp.

  3. Chop up the caramelized onions until they form a bit of a paste. Mix with the Hellmann’s Mayonnaise. Set aside.

  4. Cook the bacon on the grill, about 4-5 minutes per side then move to indirect heat and cook until crispy.

  5. Toast the buns. Cook the burger on the BBQ on high heat to sear, about two minutes per side. Move to indirect heat and cook another 6-8 minutes, making sure to add the two slices of cheese for the last two minutes of cooking, to let the cheese melt.

  6. To build, spread the caramelized onion + maple burger sauce onto the top bun. Place the burger patty on the bottom bun, then add the lettuce, tomato, pickle slices and bacon. Close the burger.
