INGREDIENTS

  • 3 cups (750 mL) cooked farro
  • 1/2 cup (125 mL) Hellmann's® Grapefruit Ginger Salad Dressing, divided
  • 2 blood oranges or regular oranges, peel and white pith removed, then sliced
  • 1 ripe avocado, cut into chunks
  • 1 cup (250 mL) red and purple radishes, sliced
  • 1 cup (250 mL) strips jicama or sliced fennel
  • 1/4 cup (60 mL) thinly sliced red onion
  • 1/4 cup (60 mL) torn fresh mint leaves or cilantro leaves

METHOD

  1. TOSS farro with 1/4 cup (60 mL) Hellmann's® Grapefruit Ginger Salad Dressing and spoon evenly into 4 bowls.

  2. TOP with blood oranges, avocado, radishes, jicama and red onion. Scatter mint over top and drizzle with remaining 1/4 cup (60 mL) Dressing.

Tip: Add some protein to this bowl by adding cooked seitan or chicken strips.
