Bite into our delicious Parmesan-Crusted Summer Fresh Bruschetta Chicken made with Hellmann's® Light Mayonnaise and Parmesan cheese.
INGREDIENTS
6 Tbsp. Hellmann's® or Best Foods® Light Mayonnaise or Hellmann's® or Best Foods® Mayonnaise, divided
2 Tbsp. grated Parmesan cheese
12 ounces boneless, skinless chicken breast halves
1 Tbsp. seasoned bread crumbs
2 small tomatoes, seeded and chopped, (1 1/4 cups)
1 small cucumber, seeded and chopped, (3/4 cup)
1 Tbsp. chopped fresh basil leaves or cilantro leaves
2 tsp. red wine vinegar
2 cups hot cooked brown rice

METHOD

Preheat oven to 425°.

Combine 4 tablespoons Hellmann's® or Best Foods® Light Mayonnaise with cheese in small bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.

Bake 20 minutes or until chicken is thoroughly cooked.

Meanwhile, combine remaining 2 tablespoons Mayonnaise, tomatoes, cucumber, basil and vinegar in medium bowl.

Slice chicken, then evenly top with creamy bruschetta mixture. Serve with hot cooked rice.
