Sweet Potato with Goat's Cheese

Delicious potatoes, stuffed with goat's cheese and Hellmann's mayonnaise
INGREDIENTS
- 4 sweet potatoes
- 6 dollops Hellmann's Real Mayonnaise
- Zest of 1/2 lemon
- 100 g soft goat's cheese
- 1 small bunch parsley, chopped
- 1 fresh red chilli, deseeded and finely chopped
- 2 tablespoons olive oil
METHOD

Preheat the oven to 190 °C, 170°C fan, Gas mark 5.

Place the sweet potatoes on a baking tray and coat with the olive oil, then season.

Put the potatoes in the middle of the oven and cook for 40 minutes or until the potatoes are soft to the touch.

Meanwhile, place all the other ingredients in a small bowl and stir a couple of times, trying not to break up the goat's cheese too much

Once the potatoes are cooked, remove from the oven and leave to cool for a couple of minutes, then cut them half way through and open them up slightly.

Divide the filling between the potatoes and serve.
