Ingredients
- 1 can (15 oz) black-eyed peas , rinsed and drained
- 2 tbsp olive oil , divided
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. salt
- pinch ground black pepper
Grape Glaze
- 1 cup red grapes cut into quarters
- 1 tbsp honey
- 1 tbsp fresh lemon juice
Lucky Sandwich
- 5 large sandwich-sized croissants , sliced lengthwise and lightly toasted
- 3/4 cup Hellmann's Real Mayonnaise
- 1 lb. sliced deli turkey
- 10 strips crispy cooked bacon (2 per sandwich)
- 2 cup arugula or shredded lettuce

For Crispy Black-Eyed Pea Smash: Place black-eyed peas in a large bowl and lightly mash. Stir in 1 Tbsp. of the olive oil, garlic powder, onion powder, salt and pepper until well blended. Heat remaining 1 Tbsp. olive oil in large nonstick skillet over medium-high heat. Add seasoned black-eyed peas in a single layer. Cook 5 minutes, stirring halfway through, until browned and crispy. Remove from skillet and cool.

For Grape Glaze: Place quartered grapes, honey and lemon juice in a small saucepan. Cook over medium heat for 10 minutes, stirring occasionally, until grapes are softened and mixture thickens to a jam-like consistency. Cool.

To Build the Sandwich: Place toasted cut croissants on cutting board. Evenly spread each half generously with the Hellmann’s Real Mayonnaise. Then evenly top the bottom half with turkey slices, bacon, crispy black-eyed peas and arugula. Evenly divide the Grape Glaze and spread on top of mayonnaise on top croissant half. Place top half over arugula to close and complete the sandwich. Enjoy, GO TEAM!
