Roasted Vegetables on Couscous with Harissa Sauce

Roasted Vegetables on a bed of Couscous, elevated by the delicious taste of Hellmann's Harissa Sauce
INGREDIENTS
- 3- 4 cloves of garlic, crushed
- 40 grams white onion, chopped
- 200 grams potatoes, sliced
- 200 grams carrots, sliced
- 200 grams butternut squash, sliced
- 150 grams red bell peppers and green bell peppers, sliced
- 3 tablespoons olive oil
- 225 grams couscous
- 60 ml Hellmann's Moroccan Harissa Sauce - Mild
METHOD

Preheat the oven to 180 C fan oven.

Arrange garlic, onion, potatoes, carrots, and pepper on a baking tray. Drizzle with olive oil. Season as desired and toss well.

Roast the vegetables in the oven, uncovered, for 40-50 minutes or just until fork tender.

Meanwhile, cook the couscous according to the pack instructions.

Top the roasted vegetables over couscous and serve with Hellmann’s Moroccan Style Harissa Sauce on the side.
