Chef's Tip
Tip: If you have trouble finding cotija cheese, you can use either Parmesan or feta cheese for elote corn. Cotija is a Mexican cow’s milk cheese named after the town of the same name in the state of Michoacán. It's a delicious dry, salty, crumbly cheese.
