Vegetarian Omelette

Eggs fluffed up with Hellmann's light mayonnaise, mixed with red pepper, courgette and aubergine
INGREDIENTS
- 4 eggs
- 2 dollops Hellmann's Light Mayonnaise
- 1/2 red pepper
- 1/2 courgette
- 1/2 small aubergine
- 2 tablespoons oil
METHOD

Cut the vegetables into cubes. Heat the oil in a frying pan and saute the vegetables. When cooked, set aside.

In a bowl, beat the eggs and whisk in the mayo. Add the vegetables to the egg mixture and mix well.

Heat the frying pan and pour in the mixture. Cook the omelette until set and cooked to a nice golden colour.
