Eggs fluffed up with a spoonful of Hellmann's mayonnaise poured over golden potatoes and fried.

INGREDIENTS

  • 4 eggs
  • 1 dollop Hellmann's Real Mayonnaise
  • 2 potatoes
  • 2 tablespoons olive oil

METHOD

  1. Thinly slice the potatoes and fry in some olive oil. When they are cooked, set aside on a plate.

  2. Whisk the eggs and add the mayonnaise.

  3. Mix the cooked potatoes with the egg mixture in a bowl.

  4. Put the mixture into a frying pan. Watch carefully to avoid the tortilla sticking to the pan. When it's cooked on one side, flip over to cook the other side.

  5. Serves 2 with a salad or share with the family and cut into slices.
