Recreate your summer holiday plans at home with this succulent South African Style Whole Chicken.


  • 1 large whole chicken
  • 1 lemon
  • 1 garlic bulb
  • 1 bunch thyme
  • 10 g black peppercorns
  • 30 g salt
  • 10 g brown sugar
  • 5 g mustard seeds
  • 5 g coriander seeds
  • 2 tea bags
  • 3 garlic cloves diced
  • 500 g water


  1. Mix the brine ingredients in a pan, bring to the boil and allow to cool. Once cool, place in a large freezer bag with the raw chicken and then place in the fridge for 24 hours. This will help to flavour the chicken and tenderise it too. Once brined, rinse off the chicken.

  2. To cook the chicken set the BBQ up with hot coals in one side of the BBQ. Stuff the chicken with lemon, garlic and thyme.

  3. Once they are white hot put the chicken on the BBQ opposite to the coals so the chicken is being cooked with indirect heat.

  4. Place the chicken breast side down for 45 mins, then turn it over for another 30 mins or so.

  5. Once the chicken has reached an internal temperature of 75 degrees, brush the chicken with Hellmann’s BBQ sauce.

  6. Leave to crisp up a bit and then serve with sides and Hellmann’s mayo.
