Smoked Salmon Sandwiches

Delicious, classic smoked salmon sandwiches. Great for snacks.
INGREDIENTS
- 80 g reduced-fat cream cheese
- 3 dollops Hellmann's Real Mayonnaise
- 1 tablespoon lemon juice
- 1 cucumber
- 50 g caster sugar
- 3 tablespoons white wine vinegar
- 2 tablespoons freshly chopped dill
- 4 slices good quality brown bread
- 180 g smoked salmon slices
METHOD

Mix together the cream cheese and Hellmann’s Real Mayonnaise with the lemon juice.

Cut the cucumber in half lengthways, then slice very thinly on a mandoline.

Bring the sugar and white wine vinegar to the boil in a small saucepan over a medium heat. Allow to cool. Add the sliced cucumber and 1 tablespoon of the chopped dill. Cover and allow to marinate in the fridge for at least 1 hour before serving.

Spread 4 slices of the bread with generous amounts of the cream cheese spread. Top with salmon slices and remaining chopped dill. Serve topped with the drained pickled cucumber.
