Salmon Skewers With Lemon Dip

Smooth dip of salmon, onions and Hellmann's mayonnaise with a zing of lemon
INGREDIENTS
- 4 salmon fillets
- 1 lemon
- 1 tablespoon olive oil
- Black pepper
- 3 spring onions, sliced
- 4 dollops Hellmann's Mayonnaise with a Zing of Lemon
- 1/2 yellow pepper, diced
- 2 tablespoon low-fat natural yogurt
- 1 tablespoon parsley
METHOD

Cut the salmon fillets into 3cm chunks and cut the lemon into thin slices.

Thread the lemon and salmon chunks onto pre-soaked wooden skewers, brush with olive oil and season with black pepper.

To make the dip, mix together the spring onion, yellow pepper and mayonnaise.

Stir through the natural yoghurt, chopped parsley and season with some black pepper.

BBQ the salmon skewers on all sides for a few minutes until cooked through, being careful not to overcook them.

Serve with crudites to dip. You can also add shrimps and other seafood.
