Tiny lovely tasty muffins made with Hellmann's mayonnaise and a funny icing for all sweet fans.


  • 200 g caster sugar
  • 14 dollops Hellmann's Light Mayonnaise
  • 200 g self-raising flour
  • 4 eggs
  • 1 level teaspoon baking powder
  • 2 teaspoons vanilla extract
  • Zest of 1 lemon
  • 200 g cream cheese
  • 1- 2 tablespoon icing sugar (to taste)

  1. Pre-heat the oven to 190°C, 180°C fan, Gas mark 5 and place 12 paper cases into a muffin tin

  2. Beat the mayonnaise with the sugar. Add the eggs one at a time. Add the vanilla extract.

  3. Sift the flour and baking powder together, then add to the mix.

  4. Spoon the final mixture into paper cases, and bake in the oven for around 15-20 minutes.

  5. In a bowl,mix all the icing ingredients together.

  6. Once the cakes are cool, spread the icing mixture over the top
