Delicious fruity bread pudding made with Hellmann's mayonnaise

INGREDIENTS

  • 200 g fruited tea loaf
  • 3 dollops Hellmann's Lighter than Light Mayonnaise
  • 40 g Flora Light
  • 50 g reduced fat custard
  • 284 ml carton Elmlea Single
  • 5 grams caster sugar, for sprinkling

METHOD

  1. Cut the loaf into 5mm slices and spread with some Flora. Cut into quarters.

  2. Grease a 1 ½ litre shallow ovenproof dish. Mix together the custard, Elmlea and mayonnaise and pour into a thin layer over the base of the dish.

  3. Layer up the loaf and custard mix, finishing with a layer of custard. Leave to soak for at least 30 minutes.

  4. Dust with caster sugar. Place dish in a roasting tin and pour in enough hot water to come halfway up the sides of the dish.

  5. Bake at 180°C, 160°C fan, Gas mark 4 for 45-50 minutes, or until the custard has set.
