METHOD

  1. This burger has been on the Big Boys menu from day one, and is one of their most popular.

  2. First job you will need to cook your onions. Thinly slice the onions and cook in a pan with the butter. You want them to be soft and translucent. Once you are at this stage you can add the honey, season to taste and leave to simmer.

  3. For the mustard mayonnaise you mix the two together and taste for seasoning.

  4. To cook the burger you will want to weigh the mince into 180g balls and season with salt and pepper. The thickness will determine the cooking time. For the thickness of a finger you want around 4 minutes on each side. Make sure your pan is hot so you get a nice crust on the meat. This will bring the flavour.

  5. Once cooked toast the bun off in the same pan to soak up the juices.

  6. Then it’s time to build the burger. Start with the mustard mayonnaise on the bottom bun, you can add lettuce and tomato if you like. Then comes the burger and top the burger with the Brie. Melt gently with a blow torch if you have one, or use your grill. On top of the Brie goes the onions, and then on the top bun add more of the mustard mayonnaise.
