Farmer omelette

Delicious salmon fillets baked in Hellmann's light mayonnaise and cherry tomatoes
INGREDIENTS
- 4 eggs
- 2 dollops Hellmann's Light Mayonnaise
- 2 tablespoons olive oil
- 1/2 red pepper
- 1/2 onion
- 100 g mushrooms
- 1 tomato
- 100 g ham slices
METHOD

Cut the pepper, onion, mushroom, tomato and ham into cubes. Heat the oil in a frying pan and saute until cooked. Set aside.

In a bowl, beat the eggs and whisk in the mayo. Add the vegetables into the bowl and mix well.

Pour the mixture back into the pan and cook the omellette until set, making sure it gets a nice golden colour on both sides.
