Chicken Tacos

This taco recipe is easy to prepare and soon to be a family favourite.
INGREDIENTS
- 1/2 red onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 cucumber, finely chopped
- 2 tablespoons chopped coriander
- 3 dollops Hellmann's Real Mayonnaise
- 100 g low-fat grated cheese
- 1 tablespoon smoked paprika
- 4 boneless, skinless chicken breast fillet
- 20 g breadcrumbs
- 8 corn taco shells
- 1/2 avocado, sliced
METHOD

Preheat oven to 200°C, 180°C fan, Gas mark 6.

Combine the red onion, tomatoes, cucumber and coriander in a large bowl. Set aside.

Mix Hellmann's Real Mayonnaise, half of the cheese and paprika. Spread onto the chicken breasts evenly. Place chicken on a baking tray. Mix breadcrumbs and remaining cheese and sprinkle onto the chicken.

Bake for 25 minutes until chicken is cooked, golden and crispy. Remove from oven and chop into chunks.

Place in taco shells. Top with avocado slices and salsa if liked.
