Delicious mini carrots, courgette and bacon rosties, made with Hellmann's light mayonnaise and herbs

INGREDIENTS

  • 100 g grated and drained courgettes
  • 2 dollops Hellmann's Light Mayonnaise
  • 100 g grated and drained carrot
  • 50 g finely chopped bacon
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon plain flour
  • 1 egg, beaten
  • 1 tablespoon oil for frying

METHOD

  1. Mix the mayonnaise with the herbs and add the chopped carrots, courgettes and bacon. Mix well.

  2. Add the flour and egg. Mix well. Divide into 8.

  3. Heat the oil in a frying pan and fry the 8 roasties for 2-3 minutes on each side until they are cooked through.
