This Boxing Day leftovers sandwich is a festive feast to rival the main event & the perfect way to make sure nothing goes to waste.


  • 30 grams Brussels sprouts, shredded
  • 1 tbsp olive oil
  • 1 tsp wholegrain mustard
  • 3 slices farmhouse bread, white
  • 2 tbsps Hellmann's Real Mayonnaise
  • 50 ml prepared gravy
  • 15 g braised red cabbage
  • 3 pigs in blankets
  • 1 tbsp cranberry sauce
  • 3 slices turkey breast
  • 20 g stuffing


  1. In a bowl, combine the shredded sprouts, olive oil, wholegrain mustard and season to taste.

  2. Toast two slices of white farmhouse bread and spread each with mayonnaise. Take the third slice of bread and soak it in gravy.

  3. Build the sandwich by layering red cabbage, pigs-in-blankets and cranberry sauce over the first piece of toast. Place the gravy-soaked bread in the middle and top this with the shredded Brussel sprout mix, turkey, stuffing and the second piece of toast.
