Big spongy sweet muffins with blueberries and a little touch of magic from Hellmann's mayonnaise

INGREDIENTS

  • 160 g blueberries
  • 7 dollops Hellmann's Real Mayonnaise
  • 115 g plain flour
  • 250 ml semi-skimmed milk
  • 75 g caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 level teaspoon baking powder

METHOD

  1. Pre-heat the oven to 200°, 180°C fan, Gas mark 6 and place 8 paper cases into a muffin tin

  2. Combine egg, sugar, mayonnaise and vanilla extract.

  3. In another bowl, mix the flour with the milk and the baking powder.

  4. Add the mixture to the already combined mayonnaise mixture. Finally add the blueberries and pour the preparation into the muffin cases

  5. Bake the muffins for around 20-25 minutes.
