Easy and quick to prepare, this fajita recipe is delicious and full of bold flavours.

INGREDIENTS

  • 4 dollops Hellmann's Light Mayonnaise
  • 1 tomato, finely chopped
  • 1 teaspoon paprika
  • 1/2 red chilli, deseeded and finely chopped
  • 2 tablespoons olive oil
  • 400 g sirloin or beef fillet steak, sliced into 2 cm strips
  • 1 red onion, sliced
  • 1 red pepper, deseeded and sliced
  • 1 courgette, thinly sliced
  • 4 tortilla wraps, warmed
  • 3 tablespoons coriander, roughly chopped

METHOD

  1. Combine Hellmann’s Light Mayonnaise, tomato, paprika and red chilli in small bowl. Set aside.

  2. In a large frying pan, heat the oil over high heat. Add the steak strips and brown for about 3 minutes. Add the onion, red pepper and courgette. Cook for 3 minutes.

  3. Arrange steak and vegetables in the middle of the tortilla. Top with the mayonnaise mixture and coriander.
