Tasty ratatouille prepared with courgette, aubergine, pepper and Hellmann's tomato ketchup
INGREDIENTS
- 300 g mixed (red/green/yellow) peppers
- 3 dollops Hellmann's Tomato Ketchup
- 100 g courgettes
- 100 g aubergines
- 100 g cherry tomatoes, halved
- 1 shallot
- 1 small onion
- 200 ml can chopped tomatoes with chillies or passata
- 1 garlic clove, finely chopped
- 1 tablespoon olive oil
METHOD

Cut all the vegetable ingredients into chunky pieces.

Heat the oil in a saucepan and saute the shallot, onion and garlic for 4-5 mins. Add the canned tomatoes or passata.

Stir in the vegetables and simmer for 30 minutes, until cooked through.

Before serving add the Hellmann's Tomato Ketchup; mix all the ingredients and serve.
