Spicy Pulled Jackfruit Sandwich

INGREDIENTS
- 3 tbsps tomato paste
- 1 clove of garlic
- 2 tbsps dark soy sauce
- 2 tbsps olive oil
- 1/2 tsp sweet paprika
- Generous pinch of chilli powder
- 1 tbsp white wine vinegar
- 2 tsps maple syrup
- 200 grams drained jackfruit (canned in salted water, not syrup)
- 1 tbsp olive oil
- Generous pinch salt
- 150 grams white cabbage
- 2 tbsps Hellmann’s® Vegan Mayo
- 1/2 tbsp white wine vinegar
- 1/4 tsp salt
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- pinch black pepper
- 2 ciabatta rolls (or rolls of choice)
- handful black sesame seeds
METHOD

Place the tomato paste, garlic, soy sauce, 2 tbsps olive oil, paprika powder, chilli powder, vinegar and maple syrup in a blender or food processor and blitz until smooth and creamy

Use a fork or your fingers to shred the jackfruit. When it is well shredded, fry the jackfruit in a frying pan in 1 tbsp olive oil and a generous pinch of salt

When the jackfruit is starting to turn golden brown, add the tomato sauce and fry for another couple of minutes

Wash the cabbage and slice into small shreds

For the dressing add the mayo, vinegar, salt, mustard, maple syrup and pepper to a small mixing bowl and whisk until you have a smooth consistency. Mix into the cabbage

Assemble your sandwiches and sprinkle the coleslaw with black sesame seeds
