Quickie Quinoa Salad

It doesn’t matter if you pronounce it qwin-o-ahh, or keen-wha, it’s still going to taste amazing with this delicious recipe.

INGREDIENTS

  • 200 grams red quinoa
  • 1 yellow pepper sliced into strips
  • 2 tomatoes skinless, seedless sliced into strips
  • 1 leek stalk thinly sliced
  • 1 fennel bulb thinly sliced
  • 100 ml olive oil
  • 1 pack of basil
  • 1 juice 1/2 lime
  • 1 juice of an orange
  • 1 chilli thinly sliced seeds removed
  • 2 grams salt
  • 2 grams black pepper
  • 4 tablespoons Hellmann's Real Mayonnaise
  • 2 grams cardomon pod

METHOD

  1. 1. Take 200 grams of red quinoa, and pour it into a cast iron pan, then dry fry gently before pouring in boiling water. After that, drain and cool the quinoa.

  2. 2. Take a yellow pepper and dice it finely, then plop two tomatoes into boiling water so you can remove the skins easily. After they have softened, gently peel the skin off.

  3. 3. Pull the fronds (top leaves) off your fennel bulb, then dice, along with a red onion, a chilli and tear the basil.

  4. 4. Zest an orange and a lime into some Hellmann’s Real Mayonnaise to make the best dressing. Then manually squeeze the orange. Add the chilli, and drizzle over the salad, before mix the whole lot together with your hands.

  5. 5. Season, serve, and feel exceptionally smug.
