Chicken & Vegetable BBQ Skewers

INGREDIENTS
- 4 chicken breast fillets cut into cubes
- 1 large courgette cut into cubes
- 1 red onion cut into chunks
- 2 bell peppers cut into bite-sized pieces
- 1 cup Hellmann's Real mayonnaise
- salt and pepper to taste
- Hellmann's Rich & Smoky BBQ sauce for dipping
METHOD

Prepare the marinade by combining the Hellmann's® Real Mayonnaise, salt and pepper.

Add the chicken cubes to the bowl, making sure each piece is thoroughly coated in the marinade. Cover the bowl and leave it in the fridge to marinate for at least 2 hours.

Heat your BBQ to a medium-high heat. While the BBQ heats up, start assembling your skewers.

Alternate pieces of marinated chicken with pieces of courgette, chunks of red onion and red pepper until all skewers are full.

Place the skewers onto the BBQ and cook for 5-6 minutes each side or until the chicken is thoroughly cooked and vegetables are tender, turning occasionally to ensure even cooking.

Once cooked, remove from the BBQ and let them rest for a few minutes before serving with Hellmann's® Smokey BBQ Sauce.
