INGREDIENTS

Pick a Base

  • Potato (any kind)

Use up your fruit & veg

  • Bell pepper, corn, peas

Add an optional protein

  • Beans, meat & cheese

Add a magic touch

  • 1 tsps mayonnaise or sour cream, 1 tsps Chives, Parsley

METHOD

  1. Wash the potatoes (do not peel), and prick the potatoes four or five times on each side with a fork.

  2. Rub with olive oil, salt and pepper.

  3. Place the potatoes in a microwave-safe tray and microwave at full power for 5 minutes. Flip the potatoes and microwave another 5-7 mins. Check the potatoes.

  4. Mix your veggies, protein and magic touch.

  5. Open the potatoes in two. Add some melting cheese and mayo/butter/milk to have a more creamy texture. Fill with your veggie mix and finish off with some extra magic touch.
