INGREDIENTS

Pick a Base

  • Eggs, cheese

Use up your fruit & veg

  • Red peppers, onion, tomato

Add an optional protein

  • Veggie Sausage or turkey bacon

Add a magic touch

  • 1-2 tbsp mayonnaise, Handful of Herbs (Parsley or Basil or Chives)

METHOD

  1. Whisk 8 eggs, ½ cup of cheese, salt and pepper.

  2. Quickly fry 2 cups of vegetables and 1 cup of cooked protein.

  3. Pour the egg mixture into the pan and let cook with a lid on over low heat.

  4. Spread your magic touch on top and serve.
