Pick a Base

  • Flour, milk, eggs

Use up your fruit & veg

  • Carrots, spinach, mushrooms or any other leftover vegetables

  1. For the base mix 1 cup of flour, 3 eggs, 2 tbsp mayo and 1/2 cup of milk in a bowl and whisk well until smooth.

  2. Lightly fry 1 cup of vegetable according to your taste. Set it aside.

  3. In a nonstick pan, cook the pancakes. Make sure that they are thin so that it will be easy to roll up.

  4. Put your veggies and protein in the pancake, roll. Add 2 tsp of your magic touch on top and serve.

For a vegan version, change the tuna for tofu and use vegan mayo. If you want to 'hide' the veggies, mix them through your pancake base and get some funky-colored pancakes.
