INGREDIENTS
Pick a Base
- Flour, milk, eggs
Use up your fruit & veg
- Carrots, spinach, mushrooms or any other leftover vegetables
Add an optional protein
- Tuna or cold cuts, cheese
Add a magic touch
- Hellmann's Real Mayonnaise, Chipotle chili lime

METHOD

For the base mix 1 cup of flour, 3 eggs, 2 tbsp mayo and 1/2 cup of milk in a bowl and whisk well until smooth.

Lightly fry 1 cup of vegetable according to your taste. Set it aside.

In a nonstick pan, cook the pancakes. Make sure that they are thin so that it will be easy to roll up.

Put your veggies and protein in the pancake, roll. Add 2 tsp of your magic touch on top and serve.
CHEF'S TIP
For a vegan version, change the tuna for tofu and use vegan mayo. If you want to 'hide' the veggies, mix them through your pancake base and get some funky-colored pancakes.
