INGREDIENTS
Pick a Base
- Pasta
Use up your fruit & veg
- Shallots, tomatoes (cherry), broccoli florets and stalks or any other leftover vegetables
Add an optional protein
- Soft cheese (like Feta, Mozarella or Burrata)
Add a magic touch
- 2 tbsp Mayonnaise, 1 lemon zest

METHOD

Preheat oven to 230°C and toss in a large ovenproof baking dish your choice of veggies (2-3 cups) with some olive oil, herbs and spices.

Place a block of feta into the center of your veggie mixture.

Bake for 25 to 40 minutes (depending on your oven), until veggies are bursting and feta is golden on top.

Meanwhile, cook 1 1/2 cup of pasta. Drain it.

Smash the feta with a fork and mix it well with your veggies. Add cooked pasta, mayo and stir until completely combined. Garnish with your magic touch before serving.
