HEAT oil in large nonstick skillet over medium-high heat and cook spinach, tossing frequently, until wilted, about 2 minutes. Remove from skillet and set aside. Cook bacon in same skillet, turning once, until lightly browned; remove from skillet and set aside.
COOK eggs, covered, until yolks are almost set, about 5 minutes, topping them with cheese during the last minute of cook time.
ARRANGE spinach on bottom half of Brioche buns then top with bacon and egg with cheese. Drizzle with Hellmann's® or Best Foods® Roasted Red Pepper Sauce and top with bun top.
