INGREDIENTS
1 Tbsp. vegetable oil
2 1/2 lbs. fresh pumpkin or butternut squash, peeled and cubed (about 8 cups)
1 medium onion, chopped
1 clove garlic, finely chopped
3 cups water
1 Tbsp. Knorr Selects™ Chicken Bouillon
2 tsp. smoked paprika
1/2 cup Hellmann's® or Best Foods® Real Mayonnaise

METHOD

Heat oil in medium saucepan over medium-high heat and cook pumpkin, onion and garlic, stirring occasionally, 5 minutes or until onion is tender. Stir in water, Knorr Selects™ Chicken Bouillon and smoked paprika and bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 10 minutes or until pumpkin is tender.

Whisk in Hellmann's® or Best Foods® Real Mayonnaise and cook until heated through. Remove from heat and cool slightly.

Process soup in pot with hand held immersion blender or process in batches in blender at low speed, until smooth. Season with salt and pepper if desired. Garnish with toasted pumpkin seeds and chopped cilantro or sliced green onions if desired.
