Combined with feta cheese, hints of lemon and the creamy texture of Hellmann's® or Best Foods® Real Mayonnaise, this beet salad is the perfect light lunch.

Ingredients

  • 1 medium lemon
  • 3 medium beets *, scrubbed, peeled and julienned (1/8- x 1/8- x 3-inch strips)
  • 3 Tbsp. Hellmann's® or Best Foods® Real Mayonnaise
  • 1/4 cup cubed feta cheese
  • 1 Tbsp. finely chopped fresh mint leaves (optional)
  • Dash ground black pepper

Method

  • 1 From the lemon, grate enough peel to measure 1/2 teaspoon and squeeze juice; set aside.
  • 2 Combine all ingredients, including lemon juice and peel, in medium bowl.
NOTE:  Try using assorted colored beets for a fun look!
*Substitution:  Use 1 jar or can (15 oz. ) beets, drained and julienned.
