Shredded leftover Christmas turkey is combined with Hellmann’s Light Mayonnaise, curry powder, curry paste, chopped dried apricots, sultanas, flaked almonds and a squeeze of lemon juice. Generous dollops of mango chutney are smeared on soft, white slices of bread which is followed with spoonful’s of coronation chicken filling and watercress or soft lettuce leaves.

  • 6 tbsp Hellmann's Light Mayonnaise
  • 3 tsps curry powder
  • 4 tsps Madras curry paste
  • 3 tablespoons dried apricots finely chopped
  • 3 tablespoons sultanas
  • 3 tablespoons flaked almonds
  • 6 tablespoons mango chutney
  • soft lettuce leaves
  • watercress
  • 1 squeeze lemon juice
  • salt to taste
  • pepper to taste
