  • 140 g plain chocolate
  • 8 tbsp Hellmann's Real Mayonnaise
  • 40 g plain flour
  • 25 g cocoa powder
  • 3 medium egg
  • 225 g caster sugar
  • 55 g walnuts
  • 1 teaspoon vanilla extract
  • 1 level teaspoon baking powder

  • 1 Pre-heat the oven to 180°C, 160°C fan, Gas mark 4. Lightly grease a 23 cm square cake tin and line with baking paper.
  • 2 Sift the flour with the baking powder and cocoa. Put the chocolate into a heat proof bowl over a saucepan of hot water and leave until melted (alternatively, microwave on medium power, stirring occasionally, until just melted).
  • 3 In a large bowl, whisk the eggs with the sugar and vanilla until slightly thickened. Then whisk in the chocolate mixture.
  • 4 Fold in the flour mixture, mayonnaise and finely chopped walnuts, pour into the prepared tin and bake in a pre-heated oven for about 35-45 minutes. Then leave to cool in the tin before cutting into squares.
  • 5 Challenge your friends to guess the secret ingredient - if you can bring yourself to give any of them away, that is.
