Method

  • 1 Prepare a BBQ smoker to 130C
  • 2 Take the rib rack and rub with the oil on both sides.
  • 3 Rub with the RAD rub and smoke In the BBQ, meat side down for 2 hours.
  • 4 After 2 hours, glaze with half chipotle and half BBQ sauce on both sides, smoke for another 20 minutes.
  • 5 After 20 minutes take a large sheet of foil (doubled up), lay it out and spread out any leftover glaze you have.
  • 6 Lay over the ribs and pour a little of the vinegar and apple mix over.
  • 7 Finish off with a little more glaze and wrap the foil tight. Place back in the BBQ for another 2 hours until tender.
  • 8 Slice up the ribs and serve with salad (serving suggestions below)
