An attractive melted cheese sandwich with chicken, spinach, and a pickled red pepper and olive salad. Here, Hellmann’s mayonnaise is smothered on the outside of the bread rather than inside. Mayonnaise melts slower than butter and doesn’t burn as fast, giving a crispy golden crust to your toasties.

Ingredients

  • 8 pitted olives finely chopped
  • 2 tablespoons finely chopped tinned piquillo peppers
  • 2 tablespoons grated carrot
  • 2 tablespoons finely chopped gherkin
  • 1 small spring onion
  • dash Tabasco (optional)
  • 2 teaspoons extra virgin olive oil
  • 4 slices sourdough bread (about 180g in total)
  • 4 tablespoons Hellmann's Real Mayonnaise
  • 80 grams cheddar cheese block grated
  • 150 grams finely sliced roasted chicken breast fillet or turkey breast
  • 15 grams baby spinach

Method

  • 1 First make the olive salad. In a small bowl, combine chopped olives, Piquillo peppers, grated carrot, gherkin, spring onion, tabasco (if using) and olive oil. Set aside.
  • 2 Spread one side of bread with a tablespoon of mayonnaise. Place on the board mayo side down, then build up your sandwich: cheddar, spinach, chicken slices then olive salad. Repeat for the other one.
  • 3 Heat a large frying pan over low to medium heat. Transfer the filled sandwiches into the pan mayo side down. Spread the remaining two slices of bread with mayonnaise and place in the pan mayo side down. Cover and cook for 6 to 8 minutes, until the cheese is nicely melted. Lift the bread slices from time to time to make sure the heat is right and adjust accordingly. The bread slices should be nicely crusty and golden.
  • 4 Close the sandwiches (the top bread slice crispy side up) and serve hot.
