Tasty ratatouille prepared with courgette, aubergine, pepper and Hellmann's tomato ketchup

INGREDIENTS

  • 300 g mixed (red/green/yellow) peppers
  • 3 dollops Hellmann's Tomato Ketchup
  • 100 g courgettes
  • 100 g aubergines
  • 100 g cherry tomatoes, halved
  • 1 shallot
  • 1 small onion
  • 200 ml can chopped tomatoes with chillies or passata
  • 1 garlic clove, finely chopped
  • 1 tablespoon olive oil

METHOD

  1. Cut all the vegetable ingredients into chunky pieces.

  2. Heat the oil in a saucepan and saute the shallot, onion and garlic for 4-5 mins. Add the canned tomatoes or passata.

  3. Stir in the vegetables and simmer for 30 minutes, until cooked through.

  4. Before serving add the Hellmann's Tomato Ketchup; mix all the ingredients and serve.
