This Turkey and Bubble & Squeak Sandwich, you can turn those Christmas dinner leftovers into something real special with a few dollops of Hellmann’s Real Mayo.


  • 1 loaf sourdough bread
  • 320 grams shredded turkey
  • 250 grams roasted potatoes
  • 125 grams shredded Brussels sprouts
  • 2 sliced spring onion
  • 2 tablespoons Hellmann's Real Mayonnaise
  • 1 tablespoon Colman's Cranberry Sauce
  • 1/4 sliced red onion
  • 4 eggs

  1. lightly crush your left over potatoes/parsnips, mix with the sprouts, 1 tbsp of Hellmanns Real Mayonnaise, spring onion. Season with black pepper

  2. Shape into 4 patties and pan fry both sides for 2 minutes till lightly golden and crispy on the edges.

  3. Remove and keep hot, meanwhile in the same pan heat the shredded Turkey till piping hot.

  4. Toast your bread and spread with cranberry sauce on the bottom halves and Hellmann's Real Mayonnaise on the top.

  5. While your bread is toasting, fry your eggs in a pan.

  6. Add your Bubble and Squeak Cake, eggs and top with the hot Turkey and sliced red onion.
