INGREDIENTS
4 medium green, red and/or yellow bell peppers
2 medium red onions, halved
1 Tbsp. (15 mL) olive oil, divided
1 medium Spanish onion or Vidalia onion, thinly sliced
2 cloves garlic, finely chopped
1 small red chile pepper, finely chopped (optional)
1/2 lb. (225 g) lean ground beef
1/2 tsp. (2 mL) ground cumin
1/2 tsp. (2 mL) chili powder
1/4 cup (60 mL) chopped chorizo
2 Tbsp. (30 mL) Hellmann's® Real Mayonnaise
1/2 cup (125 mL) basmati rice or long-grain rice, cooked according to package directions
