  • 1 medium zucchini
  • 1 Tbsp. (15 mL) Becel® Buttery Taste margarine*
  • 1 lb. (500 g) boneless, skinless chicken breast halves, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1/4 cup (60 mL) light cream
  • 2 Tbsp. (30 mL) Hellmann’s® Real Mayonnaise
  • 2 Tbsp. (30 mL) grated Parmesan cheese, divided
  • 4 ounces (115 g) fettuccine or wide noodles, cooked and drained (reserve 1/4 cup (60 mL) pasta water

  • 1 Cut zucchini in half horizontally, then cut each half into thin lengthwise strips (ribbons); set aside.
  • 2 Melt Becel® Buttery Taste margarine* in large nonstick skillet and cook chicken with garlic over medium heat, stirring occasionally, until chicken is golden and almost cooked, about 5 minutes. Stir in zucchini and cook, stirring gently, until zucchini is almost tender, about 2 minutes. Stir in cream, Hellmann's® Real Mayonnaise and 1 Tbsp. (15 mL) Parmesan cheese. Cook over low heat, stirring frequently, until heated through, about 2 minutes. Add fettuccine and toss gently with tongs, adding reserved pasta water if needed for desired consistency. Top with remaining 1 Tbsp. (15 mL) Parmesan cheese and garnish, if desired, with chopped parsley or basil.
