Blood Orange Tofu with Spinach & Quinoa

  1. Grate 1 tablespoon peel from 1 orange; set aside. Cut 1 orange in half and squeeze 2 tablespoons juice; set aside. Cut peel from remaining 1 1/2 oranges, then cut oranges into segments and set aside.
  2. Combine Hellmann’s® or Best Foods® Carefully Crafted Dressing and Sandwich Spread, grated orange peel, orange juice and chipotle chilies in small bowl.
  3. Coat tofu with 1 tablespoon dressing, then press into panko crumbs to coat. Heat large nonstick skillet over medium heat and cook tofu, turning to brown on all sides, until golden, about 5 minutes.
  4. Arrange quinoa and spinach on serving platter. Top with tofu and orange segments. Drizzle with remaining dressing.
